Roast Beef Wraps – Simple beef wraps made with roast beef, cheese, spinach, tomatoes and dijon mustard Easy to serve to last-minute guests or quick pick-me-up lunch.

Ingredients :
  • 4 Large tortillas
  • ¼ cup mayo
  • 1 ½ tsp horseradish
  • 1 cup baby arugula
  • 200g roast beef or leftover sliced steak
  • 1 medium ripe tomato, sliced
  • Salt and pepper to taste
Directions:

1. In a small bowl mix the mayo and horseradish until blended. Set aside.

2. Lay one tortilla on a surface. Spread 1 Tbsp of horseradish mayo over the whole tortilla leaving a one-inch border.

3. Place ¼ cup arugula along the bottom. Top with 50g roast beef, two slices of tomato and salt and pepper if desired.

4. Fold in the sides and roll-up. Repeat with remaining tortillas.
