Kedgeree is a dish of Indian origin that consists mainly of flaked fish, rice, hard-boiled eggs, and curry powder. Despite the ingredients, it was first introduced to the UK in Victorian times as a breakfast dish, but these days is much more likely to be served as a light meal with a delicious difference. Although haddock is the fish most often associated with Kedgeree, our smoked mackerel recipe works a treat and combines the unusual mix of ingredients to great-tasting effect.
Ingredients :
- 200g couscous - use wholemeal if you can get it
- 3 oranges, 2 peeled and thinly sliced, 1 juiced
- 3 tbsp red wine vinegar
- 1 tsp sugar
- 3 tbsp olive oil
- 1 red onion, finely chopped
- 100g bag watercress, roughly chopped
- 240g pack peppered mackerel fillets, flaked into large chunks
1. Pour 250ml boiling water over couscous, cover and leave 10 mins, then fluff up with a fork. Meanwhile, make the dressing. Mix orange juice, vinegar, sugar, and oil with some seasoning. Mix through the couscous with remaining ingredients.
2. You can serve it on a plate or eat it with toast.
