Ingredients :
- A rib-eye cut of meat
- Sea salt and freshly ground pepper
- An oiled grill
- Red onion sliced for grilling
- 3-4 Garlic cloves peeled
- 2-3 Mushrooms
- A couple of cherry tomatoes
- Red wine
- Butter
- Fresh mozzarella cheese
- Chopped rosemary
- Pizza dough
1. Let’s start by preheating the grill to have a nice sear of the rib-eye beef steak and let the cut of meat grilling for about two-three minutes per each side depending, of course, how thick slice of meat is. Then set the steak aside to rest.
2. Put some sliced red onions for grilling as well, later you’ll dice up a couple of them for the red wine sauce, and the rest of them will be part of the pizza topping.
3. Toss in a few chopped garlic gloves and grilled chopped red onion and blend them over medium heat with the already melted butter from your pan. Let that sauté for a couple of minutes then it’s time to add a generous pour of some cabernet that will give such an aromatic taste to your pizza. Let it reduce for another few minutes, then whisk in a couple of tablespoons of butter while removing the sauce from the heat.
4. Prepare the cooking plate for your pizza. Then get your dough pressed out with some cornmeal underneath to avoid sticking to the pan.
5. Start with a layer of red wine sauce, then drizzle some slices of mushrooms, a few half-sized cherry tomatoes, a couple of grilled red onion rings, pieces of fresh mozzarella cheese and some chopped rosemary.
6. Depending on how well done you want your steak, in case of medium-rare cooking, you are going to bake the pizza most of the way before topping it with the sliced rib-eye.
7. After about three minutes with the lid closed, rotate your pizza and let it cook for another three minutes.
8. You’ve already rested the steak and had the necessary time for baking the dough. Gently sprinkle slices of rested steak over the bubbling cheese. As an option before serving it, you can garnish it with fresh chopped rosemary and some blue cheese crumbles, and that’s it.
